Iranian caviar is recognized as one of the finest and most renowned types of caviar in the world. This product, which has been an integral part of Iran’s culture and economy for centuries, was initially harvested naturally from sturgeon in the Caspian Sea. However, environmental changes and excessive pressure on natural resources led to a ban on sturgeon fishing in 2010 (1389 in the Iranian calendar). This ban was implemented due to the declining sturgeon population in the Caspian Sea and to protect this valuable species.
After the ban on natural caviar fishing, Iran temporarily fell behind in the global caviar market, as at that time, the technology and infrastructure for sturgeon farming were not yet fully developed. Gradually, private investors and the Iranian Fisheries Organization entered the industry, leading to the establishment of sturgeon farms with the support of the Iranian Fisheries Organization. These farms began producing various types of caviar, especially Beluga caviar, derived from the Huso huso sturgeon, and later expanded to include other species like Sevruga, Chalbash (Russian sturgeon), and Siberian sturgeon. Nevertheless, approximately 70% of Iran’s farmed caviar production remains focused on Beluga and Baerii varieties.
Today, Iran is recognized as a leading producer of farmed caviar. Iranian caviar farms operate under high standards, and the caviar produced is still marketed globally as “Caviar of Iran.”
However, one issue that needs attention is that some producers unprofessionally label their products with the name “Caviar of Iran” in large print, while their own brand name is printed very small and inconspicuously. This is a form of misuse of the reputation associated with Iranian caviar. Producers should clearly display their brand name prominently on the packaging, with “Caviar of Iran” written smaller and alongside it to indicate the product’s origin from Iran.
In conclusion, it is important to emphasize that Iranian caviar is a valuable heritage, renowned globally for its quality and authenticity. Every producer in this field has a responsibility to uphold this heritage by offering their products to the global market with professionalism and respect.
